Elle pousse comme la vigne, grimpant sur un tronc d\u2019arbre, un poteau ou tout autre support. Originaire du Mexique, la vanille doit \u00eatre pollinis\u00e9e \u00e0 la main. C\u2019est une op\u00e9ration tr\u00e8s d\u00e9licate car la fleur de vanille doit \u00eatre pollinis\u00e9e dans les 12 heures suivant sa floraison. Dans le cas contraire, la fleur fl\u00e9trit et tombe. Aucune gousse de vanille ne peut alors pousser. Les gousses vertes sont tri\u00e9es et calibr\u00e9es, nettoy\u00e9es, tremp\u00e9es dans de l\u2019eau chaude puis s\u00e9ch\u00e9es afin de r\u00e9v\u00e9ler leur ar\u00f4me. Le processus dure environ 6 mois. Environ 6 \u00e0 7 kilos de vanille verte sont n\u00e9cessaires pour obtenir 1 kilo de vanille s\u00e9ch\u00e9e. La qualit\u00e9 de la vanille d\u00e9pend de la maturit\u00e9 des gousses vertes ainsi que de la pr\u00e9cision et de la rigueur de leur pr\u00e9paration.<\/p>\n
